In my story about my first Hoka Hey experience, I briefly mention how I ended up with severe allergies I didn’t know I had. When I came back home, I tried to see an allergist, but it was a disaster. I went to a naturopath, but my biggest help came from a friend in Georgia, Debbie Jackson. She suggested I try the autoimmune protocol for two months to get my body straightened out and figure out what was hurting me. It was during that time that I threw out my Prague Powder (nitrates for making bacon) and started making uncured bacon – basically marinated, smoked pork belly. Six years later, I am eating fairly normally (no gluten, limit processed foods, low carb), and I’ll eat store bought bacon, but I prefer to get my bacon honestly.
